Tasting Notes
Pale salmon colour with shades of nude.
Its nose has delicious notes of exotic fruits.
On the palate, finesse and elegance with a beautiful
aromatic persistence.
Pairings: small Provence stuffed vegetables, anchovy, aioli
and bouillabaisse.
Serve chilled, between 6°C and 8°C.

Wine making process
The grapes are harvested at night and cooled until pressing to maintain a low temperature throughout the winemaking process. The juices are then protected from oxidation throughout the process, and fermented in stainless steel tanks cooled to between 16 and 18°C, the temperature at which the yeasts produce the finest aromas. All parcels are vinified separately, so that at the end of the vinification process we can create precise blends in line with our quality requirements.
