Wine making process
Overall, the vineyard work is done by hand due to the steepness of the terrain. All checks are carried out manually without the use of herbicides or organic fertilizers. The soil, which has been compacted over many years, is cultivated using horse-drawn plows. During the harvest, the grapes are picked by hand and placed in small crates. Vinification begins with foot treading in traditional Douro “lagares” to extract the aromas, tannins, and color from the grapes. The juices from the different varieties are then blended and fermented in barrels or vats at a low temperature of 16°C to protect the wines’ fruity character.
