Tasting Notes

Pale yellow color, clear.
On the nose, smoky notes of citrus and vine peach.
On the palate, a clean attack, subtle acidity, a fresh and mineral wine. This white pairs perfectly with tapas
of ham and fresh goat cheese, appetizers, and gourmet salads.

Serve cold, between 8°C and 10°C (46°F-50°F).

Wine making process

The historic terroir of Armagnac, the Côtes de Gascogne vineyards extends over 20,000 hectares in the south of the Landes at the bottom of the Pyrenees. Its sunny slopes, cool nights and clayey-silt soils naturally make it the best white soil in the South of France. This low-alcohol wine is made from a selection of young vines that produce grapes naturally lower in sugar content. These are the first plots to be harvested, so they are not yet at maximum sweetness maturity. The result is a fresher, more vegetal profile with a lower alcohol content. The grapes, harvested at night, are protected by organic yeasts instead of sulphates in order to avoid the development of undesirable micro-organisms.
The grapes are then placed in an Inertys nitrogen press to prevent any oxidation. After cold stalling and settling, the juices ferment slowly in vats controlled in temperature 60,8 F.
