Tasting Notes
Bright pomelo color. Delicious notes of exotic fruits on the nose. Grapefruit notes on the palate, light and refined, easy to drink. This rosé pairs well with sushi, maki rolls, or red fruit salad. Ideal as an aperitif.
Serve cold, between 8°C and 10°C (46°F-50°F).
Wine making process
The grapes are harvested at optimal ripeness in order to preserve as many aromatic precursors as possible. Harvesting is carried out at night to preserve the freshness of the grapes.
Pressing is carried out in an inert gas (nitrogen) press to prevent oxidation of the juice. The juice then ferments slowly in temperature-controlled vats at between 44°F and 46°F. To extract the maximum amount of aromas, the lees macerate at 4°C for two weeks, then are filtered and added to the fermentation vats.
The best vats are then selected for precise blending to obtain the desired profile for this cuvée.
